Chapulines or grasshoppers have been eaten in parts of Mexico (Oaxaca, Puebla and a few other locations for centuries). The insect protein market is valued at $250 million (2020) and is expected to grow in the coming years. Here’s a quick snapshot of a field trip in which we caught, processed and ate them!
